Chocolate cookies

Today is the last day of holidays. Make these cookies ready for your kids on their first day of school as a healthy snack. They are full of a chocolate so your kids will love them.


Ingredients


• 1 cup spelt flour

• ½ cup oats flour (pulse the oats until they are ground into a powder-like consistency)

• ½ cup coconut sugar

• 2 tbsp. peanut butter

• ½ cup chocolate chips or chopped chocolate (at least 75% of cocoa)

• 2 tbsp. coconut oil

• ½ cup almond milk

• 1 tsp. baking powder

• 1 tsp. vanilla essence

• ½ tsp. salt

Preparation


  1. In a large bowl mix together dry ingredients and slowly pour milk and oil. Stir in peanut butter and chocolate chips.

  2. Preheat the oven to 356F (180˚C). Line a baking sheet with parchment paper.

  3. With a cookies scoop or spoon, scoop the dough. Arrange the cookies 2-inches apart on the prepared baking sheet.

  4. Bake 15 minutes until the edges of the cookies begin to brown. Then transfer to a wire rack to cool completely.
